Loaf ingredients
275g (1 ¼ cups) caster sugar
2 eggs
110g (1/2 cup) grapeseed oil
Zest of 2 yuzu fruit
Pinch of salt
260g (1 cup) thick vanilla yoghurt
300g (2cups) self raising flour
Yuzu Glaze
265g (1 ¾ cups) icing sugar
Juice of 2 yuzu fruit
Pinch of salt
1 tsp butter
Method
- Preheat oven 140oC(fan forced).
- Grease a 12cm x 22cm loaf tin and line with baking paper.
- Reserve half a teaspoon of yuzu zest for decoration.
- Place sugar, salt and remaining Yuzu zest in a mixer. Mix on low speed until combined and the sugar is fragrant.
- Add self raising flour and mix on low speed until combined with sugar.
- In a separate small bowl, mix eggs, yoghurt and oil with a fork until combined.
- Add wet ingredients to dry ingredients and mix on low speed until all ingredients are combined.
- Pour into the prepared loaf tin and bake for 50 mins, checking the centre with a toothpick until it comes out clean.
Icing
- Place icing sugar and salt in a small bowl.
- Melt butter in the microwave for 20 seconds.
- Add butter to icing sugar and mix until combined.
- Slowly add Yuzu juice until the icing mixture reaches desired consistency.
- Spread icing over loaf and decorate with reserved Yuzu rind.
