Yuzu loaf

Loaf ingredients

275g (1 ¼ cups) caster sugar
2 eggs
110g (1/2 cup) grapeseed oil
Zest of 2 yuzu fruit
Pinch of salt
260g (1 cup) thick vanilla yoghurt
300g (2cups) self raising flour

Yuzu Glaze

265g (1 ¾ cups) icing sugar
Juice of 2 yuzu fruit
Pinch of salt
1 tsp butter

Method

  1. Preheat oven 140oC(fan forced).
  2. Grease a 12cm x 22cm loaf tin and line with baking paper.
  3. Reserve half a teaspoon of yuzu zest for decoration.
  4. Place sugar, salt and remaining Yuzu zest in a mixer. Mix on low speed until combined and the sugar is fragrant.
  5. Add self raising flour and mix on low speed until combined with sugar.
  6.  In a separate small bowl, mix eggs, yoghurt and oil with a fork until combined.
  7. Add wet ingredients to dry ingredients and mix on low speed until all ingredients are combined.
  8. Pour into the prepared loaf tin and bake for 50 mins, checking the centre with a toothpick until it comes out clean.

Icing

  1. Place icing sugar and salt in a small bowl. 
  2. Melt butter in the microwave for 20 seconds.
  3. Add butter to icing sugar and mix until combined.
  4. Slowly add Yuzu juice until the icing mixture reaches desired consistency.
  5. Spread icing over loaf and decorate with reserved Yuzu rind.
